Quiche Lorraine

INGREDIENTS

  • 9 inch deep dish frozen pie crust

  • 150g Gourmet Chef Streaky Beef

  • 1 cup shredded Cheddar Cheese

  • 1/3 cup finely chopped onion

  • 4 large eggs

  • 1 cup heavy cream

  • 1/8 tsp cayenne pepper

  • salt and pepper

INSTRUCTIONS

  1. Preheat oven to 200°C and set a rack in the middle position.

  2. Remove pie crust from freezer and thaw. Prick bottom of pie crust with fork. Place the crust on baking sheet and bake until lightly golden, 10-15min. Set crust aside and turn oven down to 170°C.

  3. In a medium non-stick pan, cook Streaky Beef until crisp, about 10min. Transfer Streaky Beef to a plate. Cook onions until soft, 3-4min.

  4. In a medium bowl, whisk the eggs. Add heavy cream, salt, pepper, cayenne pepper and whisk till combined.

  5. Spread onions evenly on the bottom of crust. Top with half of the streaky beef, then cheddar cheese, and the remaining streaky beef. Pour egg and cream mixture over the top.

  6. Bake quiche at 170°C for 40-50min until the custard is set and slightly golden. Serve hot or warm.
